Mmmmk so we just realized we have never shared a recipe for bruschetta. WHAT?! I feel like we have done a disservice to everyone here. Before you make bruschetta here are some basics you need to know.
First, bruschetta is pronounce BREW-SKEH-TUH.
Second, do yourself and your guests a favor and make homemade ricotta to spread on these babies. You won’t regret it!
Bruschetta
Course: RecipesIngredients
1 loaf Italian bread
Olive oil
2 garlic cloves cut in half
3 medium tomatoes diced
1 green onion sliced, optional
5 fresh basil leaves, chopped
Salt and pepper to taste
2 Tbl olive oil
1 Tbl balsamic vinegar
Ricotta cheese, optional
Directions
- Preheat oven to 350 degrees.
- Cut bread into slices.
- Brush olive oil on both sides of bread.
- Place on baking pan and bake for 5-7 minutes on each side or until golden brown.
- Rub garlic on one side of bread.
- If using ricotta, spread a thin layer on each slice.
- In a bowl, mix remaining ingredients except balsamic vinegar.
- Add salt and pepper to taste.
- Top each slice of bread with tomatoes, then drizzle a little of the balsamic vinegar over top of each slice.
- Garnish with extra basil if desired.
