Mini chocolate chips: Mini is the key word. Regular-sized chocolate chips are too bulky for piping into cannoli shells and overpower each bite. Semi-sweet mini chips give you that perfect little burst of chocolate in every spoonful without taking over.

Before you add the vanilla and chocolate chips, taste the ricotta and sugar mixture first. Different brands of ricotta have different levels of moisture and salt, so the amount of sugar you need may vary. Start with a quarter cup and add more until it tastes right to you. The filling should be noticeably sweet but not overpowering since the cannoli shell adds its own sweetness when fried.
If using store-bought ricotta, pay attention to the texture. You want a ricotta that holds its shape when scooped, not one that runs off the spoon. Brands vary widely, so consider straining it through cheesecloth for 30 minutes if it seems too wet. This one step can make the difference between filling that stays in the shell and filling that slides right out.
One more thing: always fill your cannoli shells just before serving. This is not a step you can skip. Shells that sit with filling in them will become soggy within a couple of hours. Keep the filling chilled and pipe it in right before you set them out. Your guests will thank you.

Cannoli filling can last in the fridge for up to 5 days stored in an airtight container. This makes it a great make-ahead option if you are prepping for a party or holiday gathering. Mix the filling a day or two before, keep it in the fridge, and assemble the cannoli right before serving.
I do not recommend freezing the filling. The texture of ricotta changes after freezing and thawing, and you will lose that smooth, creamy consistency that makes this recipe so good. Since it only takes five minutes to make, it is easy enough to prepare a fresh batch whenever you need it.
Ways to Enjoy This Easy Cannoli Filling
While this filling is meant for cannoli shells, let me tell you all the other ways we eat it in our house. Spread it on pizzelle cookies for a quick dessert that feels fancy without any effort. Scoop it onto graham crackers for an afternoon snack the kids love. Layer it in a parfait glass with crushed pizzelle and a drizzle of chocolate sauce for a deconstructed cannoli that looks beautiful on a dessert table.
It also works wonderfully as a fruit dip. Strawberries, apple slices, and even bananas pair surprisingly well with the sweet ricotta and chocolate chips. Or spread it on a slice of toasted Italian bread for a cannoli-inspired take on ricotta toast. And honestly, sometimes we just grab a spoon and eat it straight from the bowl. No judgment here.
