Eggplant…you either love it or hate it. If you don’t know how to cook it, you’re going to hate it. But if you learn how to cook eggplant correctly it will steal your heart. We were shocked so many people wanted recipes for appetizers and sides for Christmas so here is an Italian classic.
Eggplant Rollatini

1/2 c oil
2 large eggplant peeled, cut in 1/2″ slices lengthwise
5 eggs + 1 egg
2 c Italian breadcrumbs
2 tsp garlic powder
1 1/2 c Parmigiano cheese, divided
1 Tbsp Italian seasoning
1/2 tsp each salt and pepper
1 tsp salt
1 tsp pepper
1 15oz Ricotta or 2 cups
1 c Mozzarella, divided
1 Tbsp parsley
2 c tomato sauce
Directions
- Preheat oven to 350 degrees.
- In bowl mix 3 eggs, 1 tsp garlic powder, 1 c parmesan, Italian seasoning, salt and pepper.
- Place breadcrumbs in a separate dish.
- Dip eggplant first in the egg and then the breadcrumb mixture.
- Fry in a pan with 1/2 c hot oil for 2 min on each side.
- Mix ricotta, 1/2 c mozzarella, 1 c parmesan, 1 tsp garlic powder, 1 egg, and parsley.
- Place 2 Tbl of ricotta mix in center of cooked eggplant, roll and place seam side down in baking dish.
- Top with sauce and 1/2 c mozzarella.
- Bake for 30 minutes.
