The Feast of the 7 Fishes or “Festa dei Sette Pesci” is a part of the Italian-American Christmas Eve celebration. The meal includes seven or more fishes that are considered traditional. They can include clams, squid, cod, shellfish etc. So in keeping with this tradition we decided to share a more subtle but delicious dish to add to your menu!
Risotto with Shrimp and Asparagus

2 c arborio rice
4+ c warm chicken broth
2 Tbl olive oil
1/2 c Parmesan cheese
1 onion, finely diced
2-3 Tbl olive oil
Salt and pepper to taste
1 c chicken broth
1/2 bunch asparagus, cut into 1″ pieces
1/2 lb shrimp, cleaned and cut into small pieces
1/2 tsp parsley
1/2 tsp basil
Directions
- Place rice in a medium pot, on low heat.
- Add chicken broth 1/2 c at a time stirring constantly until broth is absorbed then add another 1/2 c. Repeat until rice is done. Add extra broth if needed. This can take up to 20 minutes or more.
- Add the olive oil and stir well. Add 1/4 c Parmesan cheese, stir, and set aside.
- Sauté onion in olive oil until golden. Add asparagus, salt and pepper and brown for 2 minutes.
- Add 1 c broth, cover and cook until al dente. Add shrimp, mix and cook 10 minutes. Add parsley and basil and allow to cook an additional 5 minutes. If too dry add a little broth.
- Stir in remaining Parmesan. Mix into cooked risotto.
