I am FINALLY getting round to sharing our most requested summer produce recipe TOMATO SAUCE!

Garden Fresh Tomato Sauce
Course: DinnerIngredients
10 medium Roma tomatoes
1/4 c olive oil
3 lg garlic cloves, minced
1 tsp salt
1/2 tsp pepper
1/4 c basil leaves, chopped
Directions
- Fill a large pot with water and bring to a boil.
- Place tomatoes in boiling water and blanch for 3-5 minutes or until skins start to split. Remove tomatoes with a slotted spoon and place in a bowl of cold water.
- Peel tomatoes and chop into pieces.
- In a large sauce pan, heat olive oil and add garlic. Cook until lightly golden.
- Add tomatoes, salt, pepper, and basil.
- Stir and gently smash the tomatoes using a potato masher or fork.
- Bring to a boil and reduce heat and simmer on medium low for 20 minutes, stirring occasionally.
- Top with fresh torn basil leaves if desired.
