Both Mamma Silvana and myself have gone through phases of being gluten free.
At first, it felt like a total loss—especially as Italians where pasta and bread practically run through our veins! We wondered how we could possibly survive without these staples in our lives.
But guess what? We did! And we learned a lot along the way. If you’re gluten-free due to sensitivities, Celiac disease, or other health reasons, I’m here to tell you—you can still enjoy incredibly delicious food. Today, there are so many fantastic gluten-free options available that you won’t miss a thing!
I’ve tried nearly every gluten-free pasta on the market. One or two brands came close, but nothing beats this homemade gluten-free egg pasta recipe. It’s so good that I could fool almost anyone (except maybe Mamma Silvana, but definitely everyone else!). You’d never believe it’s gluten-free!
Choosing the Right Gluten Free Flour
Your choice of gluten-free flour is crucial for the perfect homemade gluten-free egg pasta. Not all gluten-free flours are created equal! So, which gluten-free flour performed best? For me, Bob’s Red Mill Gluten Free 1:1 Baking Flour was the clear winner. It provided excellent flavor and was easy to work with. However, Cup4Cup Multipurpose Flour came in as a close second! Honestly, I wish these two flours could combine into one to create the perfect pasta flour. Cup4Cup had a texture closer to traditional homemade pasta, but Bob’s Red Mill won me over with its superior flavor. In the end, flavor always wins, and Bob’s Red Mill delivered great texture too!

All that being said, when selecting gluten free flour the MOST important thing to look for is xantham gum. If your flour does not include xantham gum this pasta recipe will not work. So check the ingredients and if your flour does not have xantham gum you will need to add about ¼-½ tsp xantham gum to your flour after you have measured it out.

Homemade Gluten Free Egg Pasta
Course: PastaIngredients
1 cup 1:1 gluten free flour
2 eggs
1 Tbs olive oil
1 tsp salt
Directions
- Place flour in a bowl or in a heap on a table or board.
- Make a well in center and add eggs, salt, and oil.
- Mix with a fork or hands until it can be gathered into a ball. If still dry, sprinkle with a little water until it holds together, if it gets sticky add a bit of flour as you knead the dough. Should be smooth and only slightly tacky.
- Wrap in plastic and let rest for 10 minutes.
- Divide dough into 4 sections, working one section at a time, flatten to about 1″ thickness. Then using a rolling pin roll until thin, dusting with flour as you roll so it doesn’t stick to the table or rolling pin.

Notes
- This can also be done using a pasta machine. Roll dough on counter until 1-½” thick before rolling through pasta machine. To avoid sticking, dust your rolled pasta sheets with flour before cutting into strips.
