Italian Fried Rice

Remember last week when I threw together a 30 min Italian fried rice? I’m finally getting around to sharing the recipe!
The fresh tomatoes make this dish ??

Ingredients

  • 1/4+ c olive oil

  • 1/4 c onion, finely diced

  • 1 large garlic clove, minced

  • 1 c chopped broccoli

  • 1 c chopped zucchini

  • 3 c cooked rice (it is best to use cold rice)

  • 1 tsp salt

  • 1/2 tsp Italian seasoning

  • 1 1/2 tsp basil

  • 1 tsp garlic pepper

  • 1/2 c Parmesan cheese

  • 3/4 c cherry tomatoes, halved

  • 1 c. chopped spinach or Swiss chard (optional)

  • 1 chicken breast grilled/baked, diced

  • Salt and pepper to taste

Directions

  • In a large frying pan heat 2 Tbs olive oil over medium low heat.
  • Add onion and saute 2 minutes.
  • Add minced garlic and cook an additional 1 minute.
  • Add broccoli and zucchini and season lightly with salt and pepper. Cover and cook 5-7 minutes stirring twice.
  • Push the vegetable mixture to the side of the pan, turn heat up to medium-high and add 2-3 Tbs olive oil and rice. Fry the rice for 5 minutes stirring frequently.
  • Stir in vegetable mixture, spices, chicken, Parmesan, and spinach/chard (if using). Saute for 1-2 minutes and remove from heat.
  • Immediately add tomatoes and stir.
  • Serve with grated Parmesan Cheese
