My dad was a great cook and on the weekends he was always making something delicious!
One of my favorites was his simple potato salad. It has very few ingredients but put together they are amazing! I would watch him make it and then we’d eat it with some crusty fresh bread my mamma had just made. To me it’s one of those comfort foods that brings back memories of papa in the kitchen!!
This recipe is perfect for summer get togethers and I am here to tell you it is 100 times better than the American potato salad. You be the judge 🙂

Italian Potato Salad
Course: Sides, SaladsIngredients
3 medium potatoes
1/2 small onion, diced
2 celery stalks, chopped
Salt and pepper to taste
1/3 c olive oil
1/4 to 1/3 c white vinegar or to taste
6 oz fresh green beans, optional
Directions
- Cook potatoes in boiling water until fork tender, about 25-30 minutes. If using green beans, add to the boiling potatoes about 5-7 minutes before the potatoes are finished cooking.
- Drain, cool, peel, and cut potatoes into cubes.
- Put in a bowl and add salt and pepper to taste.
- Add celery and onion, and green beans (if using). Stir.
- Drizzle olive oil over all the potatoes and stir.
- Add 1/4 c vinegar. Stir and taste, add more salt and vinegar if needed.
- Place in the fridge to cool for a couple hours or overnight if serving cold.
- Before serving, taste and adjust salt, vinegar and olive oil if needed as the potatoes will absorb a lot of the flavor.
