Directions

Ingredients

  • 1 loaf Italian bread (7-8 c diced)

  • 1/3 c butter

  • 4 Tbsp olive oil, divided

  • 1 small onion, chopped

  • 2 celery stalks, chopped

  • 2 medium carrots, grated (about 1/2 c)

  • 1/4 c fresh parsley, chopped + extra for topping

  • 1 Tbsp fresh sage, chopped

  • 1 Tbsp fresh rosemary, chopped

  • 1 large garlic clove, minced

  • Dash of salt and pepper

  • 1/2 c Parmigiano cheese, divided

  • 1 lb cooked mini meatballs (get our recipe in this free download)

  • 1 egg beaten

  • 1 c vegetable broth

Directions

  • Heat oven to 300 degrees. Cut the bread into slices, then into cubes. Place bread onto a baking sheet, bake for 10 minutes. Stir the bread cubes and bake an additional 10 minutes. Remove from the oven and turn oven to 375 degrees. 
  • Add 2 Tbsp of olive oil and the 1/3 c of butter to a large pan on medium heat and combine until butter is melted.
  • Add the onion, celery and carrot to the pan and sauté for 5 minutes. 
  • Stir in the parsley, sage, rosemary and garlic, sauté’ for an additional 2-3 minutes.
  • Place the toasted bread and veggie mixture in a large bowl, making sure to add any oil and butter left in the bottom of the pan. Toss to combine.
  • Top with 1/4 c Parmesan cheese and a dash of salt and pepper. Stir.
  • Gently combine the mini meatballs with the bread mixture.
  • Add the beaten egg and vegetable broth and stir until the liquid is absorbed. 
  • Pour the mixture into a 9×13 baking dish and drizzle the remaining 2 Tbsp of olive oil on top.
  • Bake covered for 15 minutes. Uncover and sprinkle the remaining 1/4 c of Parmesan cheese on top of the stuffing. Bake an additional 15 minutes uncovered. Broil for 3 minutes to brown the top. Watch closely so it doesn’t burn.
  • Serve topped with a sprinkle of fresh parsley.
