Ah cucuzza! There’s something about this plant that just feels magical. The enormous leaves, tightly coiled tendrils, and squash that can grow taller than my children. We have never found cucuzza available to purchase here so we started growing our own 2 years ago and we are obsessed?
Nonna had a few different dishes that she used to make with cucuzza and this savory soup is one of our favorites! Have you tried cucuzza?! Even if you don’t have access to this yummy squash this soup can be made with zucchini and remains equally delicious!

Nonna’s Cucuzza & Potato Soup
Course: Pasta, RecipesIngredients
1/4 c olive oil
3 c cucuzza cubed (or zucchini)
3 c potatoes, peeled and cubed
2 minced garlic cloves
1 Tbl basil leaves
1 Tbl salt
1 tsp pepper
1 lg can diced tomatoes
4 c water
1 c small pasta (shells, ditalini, etc)
Parmegiano
Directions
- In large pot heat the olive oil
- Add cucuzza, potatoes and basil
- On high heat stir and cook 5 minutes
- Add garlic and cook 2 minutes longer
- Add remaining ingredients, all but the pasta and cheese.
- Bring to a boil then simmer on medium heat for 15-20 minutes or until veggies are tender.
- Add the pasta and cook 5 minutes. Turn off heat, the pasta will keep cooking in the hot water.
- Let rest 10 minutes then serve topped with Parmegiano!
