This simple rice recipe is a go to side in our house! Everyone loves it and we rarely have leftovers! I shared this last week when I threw together a quick dinner of baked fish and rice and had a lot of requests for a written version!
Parmesan Rice
Course: SidesIngredients
2 Tbs + 1 Tbs butter
1 Tbs olive oil
2 lg cloves garlic, minced
1 c uncooked rice
1 c chicken broth or water
1 c milk
1/2 tsp salt
1/3 c Parmesan cheese
1 Tbs fresh chopped parsley
Directions
- Place olive oil and 2 Tbs butter in a medium saucepan over medium heat.
- Once butter is melted, add minced garlic and saute until fragrant for about 2-3 minutes.
- Add the rice and stir to coat.
- Add broth, milk, and salt and bring to a boil.
- Reduce heat to low, cover pot, and cook for 20 minutes or until rice is tender.
- Add remaining butter, Parmesan cheese, and parsley. Stir to combine.
- Top with more Parmesan cheese if desired.
