Peach caprese has stolen our hearts this summer. Once peach season hits we can’t get enough. It is so fresh and so light and brings us so much joy!
You can spice this up even more by adding tomatoes along side the peaches or even a slice of bread under the mozzarella to make a crostini. The balsamic glaze that we love to use is the fig balsamic which gives a little extra sweetness!
Peach Caprese
Course: Sides, SaladsIngredients
1-2 peaches, sliced
8 oz fresh sliced mozzarella
10 small basil leaves (or 5 large, ripped in pieces)
Extra virgin olive oil
Balsamic glaze (we like to use fig)
Directions
- Cut mozzarella in half and lay out on a platter.
- Place peach slices on top of mozzarella.
- Place a piece of basil on each peach.
- Drizzle with olive oil and balsamic.
