  • 7–8 large potatoes, peeled and cubed
  • 1 tsp salt
  • 2 tbsp butter

  • 1/2 c milk
  • 1/4 c Parmigiano Reggiano
  • 1 tbsp fresh parsley, chopped
  • 1 tsp salt

Directions for Roasted Garlic and Ricotta Mashed Potatoes

  1. Roast garlic bulb and cut the tops off of each bulb to keep cloves intact. Cut off the top of the garlic bulb and drizzle with olive oil. Cover with foil. Bake at 375°F for 45–50 minutes. When soft and golden brown, pull garlic from the oven and allow to cool. Once cooled, squeeze each clove into a bowl and mash with a fork. Set aside.
  2. Place potatoes in a large pot and cover with water. Add 1 tsp salt. Bring to a boil and cook until tender, about 20 minutes.
  3. While potatoes cook in a separate bowl, combine ricotta, cream, milk, Parmigiano, parsley, salt, and pepper. When potatoes are done, drain water and return to the pot.

Ingredients

Directions

  • To roast a garlic bulb: peel the outer layer of skin but keep the inner layer intact. Cut off the top of the garlic bulb exposing the individual cloves. Drizzle with 2-3 tsp olive oil. Wrap losely first with parchment paper then in foil. Seal and bake in a 400 oven 30-40 min. Cool and remove skins, set aside.
  • Place potatoes in a large pot and cover with water. Add 1 tsp salt. Bring to a boil and cook until tender, about 20 minutes.
  • While potatoes cook and in a separate bowl, combine ricotta, cream, milk, Parmigiano, parsley, salt, and pepper. Once potatoes are tender, drain and return to the pot.
  • Add butter, garlic, and cheese/cream mixture. Using a hand mixer and blend until smooth. If potatoes are too dry add a splash of milk.
  • Place in a large shallow bowl and sprinkle fried bread crumbs on top.
